Happy Day Cake
1 cup plus 2 tablespoons cake flour
1 / 2 teaspoon salt
1 1 / 2 teaspoon baking powder
3 / 4 cup sugar
1 / 4 cup shortening
1 / 2 cup milk
1 / 2 teaspoon vanilla
1 egg
In a medium bowl, seven together the cake flour,Salt, baking powder and sugar. Add in the shortening, milk and vanilla. With an electric mixer, beat the mixture for 2 minutes. Add the egg and beat the mixture for an additional minutes. Grease and flour an 8-inch baking pan. Pour batter into the cake tin. Bake in a 375-degree oven for 25 minutes. Frost with your favorite frosting (chocolate) at our house or at the top with berries and whipped cream.
Cloud Nine Butterscotch Squares
1 / 2 cup butter, softened
1Package (3 3 / 4 ounce) instant butterscotch pudding mix
2 eggs
1 teaspoon vanilla extract
1 cup flour
1 / 2 cup milk
1 cup quick-cooking oats
1 cup semi-sweet chocolate chips
In a large bowl, beat the butter until it is creamy. Add in the pudding powder and mix well. Add the eggs and vanilla extract. Alternatively, you add in the milk and the flour. Mix well. Stir in the oats and chocolate chips. Put the mixture into a 9 x13-inch baking pan. Bake in a 350-degree oven for 20 minutes. Cool and then frost with the following.
Chocolate Glaze
6 tablespoons butter
6 tablespoons milk
1 1 / 2 cups sugar
1 / 2 cup chocolate chips
In a small saucepan over medium heat, combine the butter, milk and sugar. Bring the mixture to a heavy boil. Allow the mixture to cook quickly for 30 seconds. Remove the mixture from the heat and add the chocolate chips.Allow to cool slightly and then frost the bars.
